Training professional chefs is a totally different ball game. Professionals know how to cook. They know the methods, they are familiar with the tools and they have a very broad understanding of what it takes to make food a pleasure.

Still, few chefs score highly on nutrition. In fact, most chef recipes, although admittedly tasty and gorgeous to look at, are rarely healthy. To most people this might not matter, but to those who care - and increasingly more of us do - it does.

Teaching you, a pro, to cook using healthy ingredients and methods is like teaching someone to speak a new language or play a different musical instrument. You've done this before, but now you have to learn new notes, sounds and tunes until you are confident enough to compose your own masterpieces.

Allow me, then, to be your music teacher. It will be my pleasure to share with you extensive practical and theoretical knowledge gained over many years of continuous studies and a personal love of cooking. You will learn how to feed body, mind and soul, not just the greedy mouth. You will discover new ingredients, even new tools and ways of work, because the emphases in a healthy kitchen differs to that in a 'normal' one. You will explore, fusion style, different cooking traditions - from Chinese and Indian through Middle Eastern and Mediterranean to Macrobiotic and Raw Only - to find out the best each of these has to offer. You will develop a thorough understanding of the relationship between food and health.

Some of the subjects you may want to find out more about include

·   working with the solar and lunar calendars

·   working with the seasons to achieve health and balance

·   using food to reduce stress

·   cooking for specific conditions

·   food to support different organs and functions

If this sounds a bit alternative, then let me assure you - I'm sensible. I won't suggest making a cheese cake from carrots, because if you're going to make a cake, you have to accept it won't be strictly healthy, so you might as well make adjustments where they won't hurt. Food is pleasure, good food is tasty, and that's the way it should stay, ditto for healthy food.
